In Siena the AIRO professional training course for olive oil tasters
AIRO, the International Association of Oil Restaurants, will be in Siena for the first time, in January 2023, with the official course for aspiring olive oil tasters. It is a complete training course designed for professionals and enthusiasts who want to deepen their knowledge of quality olive oil.
The course will begin on Monday 9 January and will be divided into 12 lessons for a total of 35 classroom hours divided into 5 days, made up of frontal lessons, four practical tests and four selective tests. During the lessons, topics such as sensory analysis of oils, chemical and varietal characteristics, reading labels, production, conservation and tasting techniques will be addressed. The course will end with a food-wine pairing dinner at an AIRO member restaurant
The panel leader and course manager is Franco Pasquini, professional taster since 1995 and COI panel leader since 1997. Since 2011 he has been president of ANAPOO (National Association of Professional Olive Oil Tasters).
At the end, the certificate of physiological suitability for tasting olive oil will be issued, which is essential for enrollment in the National List of Technicians and Experts of Extra Virgin and Virgin Olive Oils.
The venue for the course will be the ChiantiBanca auditorium, via Giovanni Paolo II, 1 in Monteriggioni (Siena), except for the VII lesson on Wednesday 18 January, which will take place in the tasting room of the 4 commissions of ANAPOO (Agrarian Technical Institute of Florence , via delle Cascine 11, Florence).
