Lunch like from a chef. Preparing roast veal neck requires patience
You will need a little more time and money to prepare this dish. But you will see that the result is worth it. Baked veal neck will ward off not only hunger, but also the gloom from the harsh autumn weather. It looks and smells great on a plate. Before you start baking, don’t forget to prepare the marinade for the meat in advance.

Roasted veal neck
We will need:
- 1 pc calf neck bound
- 3 carrots
- 3 pieces of parsley
- 3 spring onions
- 3 handfuls of fresh parsley
- 2 tablespoons of olive oil
- 2 onions in their skins
- 3 bay leaves
- 6 pieces of pepper
- 3 cloves of garlic
- 1 tablespoon plain flour to thicken the sauce
- plain flour and breadcrumbs for coated meat (50:50, approx. 3 tablespoons)
- 2 tablespoons barbecue sauce
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- 1 teaspoon dried rosemary
- 1 teaspoon of salt
- 1 teaspoon ground pepper
- Mix everything together, rub the meat and leave it covered with foil in the refrigerator for 24 hours.

Cover the veal neck with a mixture of flour and breadcrumbs. Fry in hot oil in a large pan on each side and set aside.
Add carrot, parsley, spring onion, parsley, whole pepper, bay leaf to the baking and fry.
Pour in broth or water, you can also use beer.
Place the meat on top of the vegetables, cover with a lid and simmer for 15 minutes.
Heat the oven to 180 °C. We will prepare a baking pan that also has a lid. Put the vegetables and the water we have there on the bottom of the roasting pan, and put the meat on top.
Place onion and garlic around the meat, add salt and bake for 2 hours. The baking time may be longer depending on the type of oven.

When the meat is soft, take it out and put it aside. We take out the vegetables and pour the baked goods from the baking pan into the pot in which we will make the sauce.
Mix 1 tablespoon of plain flour in approximately 2 dl of water and pour into the pastry. Mix with a whisk and let it boil.
