Toulouse. Bistro cuisine and original recipes: l’Arpète sets up shop at the Carmes market

There is something new on the side of the Carmelites marketa Toulouse ! L’Arpetea brand new restaurant has just opened there in November 2022.
After Souk and Loge 24
It is in place of Loge 24 that this new establishment took place, thus ending an adventure reinitialized in 2006. During the summer, Paul Fourcade and Olivier Sy, the two managers of Loge 24 had already checked their concept, launching Souk, an ephemeral restaurant with the support of Rodolphe Lafargea well-known food blogger at Toulouse.
“It was a hit,” explains the new cook. At the first service, we already had 80 seats! And the mayonnaise took well between us. »
The happy team
Paul Fourcade, Olivier Sy and Rodolphe Lafarge therefore joined forces to launch the Arpète. After years of discovering and making known the chefs of toulouse and the surrounding areaafter having strongly supported them during the various confinements, notably via the “Take away Challenge”Rod and roll therefore definitely goes behind the stove.
“I’ve been in the kitchens for more than fifteen years, he recalls. I’m self-taught but, in the kitchen, I can count on Valentine who has worked in several big houses and who has the technique. I can lift a fish, but she can do it in two seconds! »
“There is a complementarity between all of us, confirms Paul Fourcade, the historic boss of this lodge in the Carmes market. We all get along well and the project is cool. »
Original creations and bistro cuisine
A good atmosphere from the kitchen to the dining room which is reflected in the plates. With a “rather bistro” cuisine and for which the teams set up “no barriers”. As with these nans with porcini mushrooms – the hit of the moment – but also more traditional recipes.
“We go from the classics of bistro cuisine like the horse steak or theshallot tab to original creations”, explains Paul Fourcade. Like grilled calf’s head, veal jus, tartar sauce or Mediterranean red squid, fish soup with saffron harissa, organic red rice pilafs from Italy, served recently in this establishment where the menu is validated every day.
Soon an Arpette café
The arpète will take on a new dimension in a few months: Paul Fourcade has just obtained authorization to operate the lodge next to his, left vacant.
This is where the Café de l’Arpette should open, a large counter with outdoor tables where you can eat on the go or enjoy a drink. The opening is scheduled for the beginning of 2023.
