I generally keep the last cucumbers from the harvest for fermentation. The real ones, stored in an earthenware pot, last for almost a year. Every year, I only prepare them at the very end of summer, when the garden is almost harvested.
Unlike pickled cucumbers, they are not demanding on size, and actually the aesthetic side of the cucumber is not decisive either. In fact, they totally can be. And such a kvass after a successful party… as you can find. But you can also enjoy it with regular meat and potatoes, or with scrambled eggs.
