between bistro and tea room, the Roll revisits the famous American sandwich
“We wanted to cook quickly, but only with vouchers” summarizes Maxime, co-manager of Roll. Open since September 9, the establishment offers the famous American sandwich, known as lobster roll (lobster sandwich) available in different flavors. For their part, Maxime and Jori wanted to present Toulouse residents with a menu based on fresh and local products, in a concept halfway between bistronomic restaurant, tea room and dark kitchen.

Promote the short circuit
For the two Toulouse friends, working in a short circuit is the very essence of “fast-good”. “Eating well rests above all on quality products”. To go in this direction, Maxime and Joris contain ingredients from the region such as trout from the Pyrenees, beef from Aveyron, soy protein from Pau or even chicken from the south-west selected by a butcher from Turnsheet.

The brioche, which is the flagship element of the “roll”, comes from the bakery, EK Pastry located close to the establishment of the two Toulousains. Although the concept is inspired by lobster rolls, called guédilles in France, Maxime and Joris do not rule out enhancing their lobster menu exceptionally during the festive period.
Initially, we didn’t want to offer it as a lobster roll because it gave a cost on the menu price, and it’s not a local product. However, we will surely offer it in the future, because our customers want to taste it the way we do it. We may prepare it for the holidays,” Maxime told L’Opinion Indépendante.
Plenty of tea
Outside lunch and dinner hours, the Roll is transformed into a tea room. Again, the map is well provided. The institution collaborates with Tea Seasons, enough to taste multiple fragrant infusions. On the coffee side, the Roll offers the roaster’s products Pearl Negra.
For those with a sweet tooth, all the desserts are homemade: brioche, panacotta, tiramisu, banoffee or even chocolate mousse. The concept of “all homemade” is pushed to the drinks served by the Roll, in particular with lemonades and fresh juices squeezed by the establishment. The Roll also collaborates with local businesses for their drinks offer. À la carte, Matecito, which is a cold tea made from mate leaves made from ToulouseFoliz, which is a natural carbonated drink.
For customers, the tea room area will therefore be conducive to gourmet breaks and relaxing. And for good reason, the establishment benefits from a cozy and refined decoration, with fabric swings, toy library and wifi, ideal for working in peace, far from the bustle of rue des Filatiers!
