The best Schiacciata with grapes from Florence
The fourth edition will be attended by 16 bakeries-pastry shops in the metropolitan area
Wednesday 5 October at 11 am, at the Casa della Nella restaurant-trattoria in Florence (piazza Ghiberti 20-21R, tel. 055/2026210) the IV Edition of the gastronomic competition open to ovens and pastry shops in the metropolitan area will take place “The best crushed with grapes from Florence “. The event opens a day entirely dedicated to this typical product: in the afternoon, in fact, all “non-professionals” can compete with a passion for cooking and the world of food.
The starting idea
With a view to enhancing Florentine gastronomic traditions, the organizing committee, made up of Massimo Cortini, pastry chef and entrepreneur in the catering sector, and Maurizio Melani, journalist and university professor – former organizers of the pastry contests “The best Florentine crushed” ( now in its 11th edition), “The best artisan dove in Florence and” The Florentine zuccotto between tradition and modernity “has also decided to relaunch this contest interrupted a few years ago after the death of Beppe Pirrone, historic co-organizer with Massimo Cortini.
Professional competitors
16 participants, selected from prestigious names of bakeries and pastry shops in the Florentine metropolitan area: Andrea (Compiobbi), Antico Caffè Torino (viale Matteotti), Antico Forno Fabbri (via V. Emanuele), Batoni (piazza Batoni), Caffè Neri ( Calenzano and Campi), Forno Becagli (Borgo Ognissanti), Buonamici (via dell’Orto), Cartabianca (via Panciatichi in Florence and via Valentini in Prato), Il Barco (via il Barco), Orcagna (via Orcagna), Pala and Matterello (Sesto F.no), Forno Pandolce (Scandicci), Focacceria Pappa e Ciccia (via Torcicoda), Rigacci (Cerbaia), Serafini (via Gioberti), Vintage (via Ponte alle Mosse).
On the morning of the competition, the schiacciate from each of the selected bakeries-pastry shops (for their history, presence in the area, reports) will be brought to the position established for tastings. The members of the Jury (made up of pastry chefs, gastronomes and journalists) will have to taste a portion of all the cakes in a “covered” way, not knowing who the producer is and then giving a score of 1-5.
The competition for non-professionals
Starting at 3 pm, all the “foodies” who love cooking who want to try their hand at this singular contest will be able to bring their crushes, again at the Casa della Nella, where they will be tasted by a mini jury with the pastry chef Simone Bellesi in charge. Conditions of participation: i) be “non-professionals” in the sector but only amateurs ii) make a minimum donation to the Meyer Foundation (bringing a copy of the receipt together with the schiacciata).
The winners of both categories will receive a themed painting by the painter Massimo Console.
