Toulouse. After years on the Place Dupuy side, this famous restaurant is moving to the city center

For a long time, this restaurant welcomed customers on rue Pierre-Paul Riquet, near the Place Dupuya Toulouse. But since the beginning of September, the bistro La Madeleine de Proust has moved to rue Peyrolières, in the hypercentre of the Pink City.
“After 23 great years in rue Riquet, I want a new story, a new dynamic, says Philippe Merle, the owner of the establishment. I had a crush on this district of the hypercentre which still has a real village life. »
Short circuits and farm products
In this new setting, Philippe Merle wanted to recreate the atmosphere that prevailed in his previous establishment. “My professional life was marked by a meeting with the chef Bernard Loiseau, says the man who has had a long career in Relais & Château establishments, particularly in the South-West and the Loire Valley. With him, I understood that the producers had a know-how and that it was necessary to highlight it on the plate. »
The establishment’s chef – who has worked alongside Philippe Merle for thirteen years, a challenge in this highly competitive catering environment – therefore favors short circuit products.
“Sincere and generous” bistro cuisine
“We work directly with many farms, explains Philippe Merle. Our cheeses come from producers in Lauragais and Volvestreour meats are produced in the South-West, for the wine, we favor small local operators…”
On the plate, the customers of La madeleine de Proust find a “sincere and generous” bistro cuisine. Perfect egg, gravlax salmon, half-cooked homemade foie gras, Basque veal, duck breast, but also heirloom vegetables… “We change the menu around 30 times a year, says Philippe Merle. A la carte in the evening, formula for lunch. »
At lunchtime, the starter-main course is 18.50 euros and the main course alone is 14.50 euros.
retro Decoration and welcome like at home
As in the old establishment on rue Riquet, the decoration is found in base of old games and toysnod to childhood: “most of them were given to us by customers”.
Loyal customers and newcomers who sometimes give “Monsieur Proust” or “Marcel” to Philippe Merle. ” It does not bother me ! For me the relational is very important, I receive as at home. »
The premises can accommodate around thirty people, around a pretty open kitchen.
