Markthalle: Regional shrimps at the outdoor snack stand
The market hall offers a colorful mix of regional and local products and traditional dishes from all over the world. A new snack stand in the outdoor area of the market hall relies on a rather unusual regional product: the alpine shrimp.
INNSBRUCK. After six years of the Alpenshrimp project, the owners Daniel Flock and Markus Schreiner dare to take the next step and break new ground with their food container. The Alpine shrimp concept should be made suitable for snacks. Homemade wraps with alpine prawns, pulled pork, chicken or vegetarian, fish & chips, salads or filled ravioli – this selection is presented in the market hall.

The trained designers and hobby fishermen founded the Alpine shrimp in 2015.
“The idea came about during a classic pub conversation, when we were talking about the poor quality of the goods available and the poor breeding conditions in Asia,” remembers Daniel Flock.
The alpine shrimp are bred with a lot of effort, energy efficiency and without waste water. In a gentle process, the shrimp grow in sushi quality and without chemicals and antibiotics for five months. You can taste and see the difference. “Due to their good taste, our prawns hardly need to be seasoned and they don’t lose any water during cooking,” reveals the stallholder. The farm sale is always possible on Fridays and during the week on reservation. Alpine prawns can also be purchased from Kofler fish farm in the Innsbruck market hall. The shrimp stay fresh for up to five days, while they can be used shock-frozen for up to half a year.

Regionality as a figurehead
At their new stand in front of the market hall, the two career changers not only want to offer high-quality, but also regional products. In addition to the domestic alpine shrimp, they therefore work together with local producers: from the drinks supplier, who believes in organic quality juices and sustainable syrups, to various types of Zillertal beer and regional ice cream from the company “Hitzefrei”. In addition, the Tyrolean pasta manufacture is believed with shrimps and fish from Tyrolean fish farmers, which are further processed into the filling for tortellini and ravioli and sold as dishes at the stand. While only fresh food is currently on offer, it should also be possible to purchase the finished products at the stand in the future. The stand is open Monday to Saturday from 11 a.m. to 9 p.m., weather permitting.
Outdoor market activity
The restaurateurs deliberately chose the location, because market halls are always associated with local dishes and tradition.
“We had already built a mobile kitchen for the fish market and thought it was a shame that we only used it once. In view of this, we looked for a long-term solution and found what we were looking for in the market hall in Innsbruck,” says the experienced fish farmer happily.
“The good cooperation with the other stand owners is extremely important to us. We can only arouse the interest of the customers if we accept the offer and we can all benefit from it.” The market hall used to have a gastronomic presence in the outdoor area, since then there has no longer been an outdoor kitchen, but seating on the Inn-side sun terrace.
