The “Rousquilles du Palais” to make the people of Toulouse crack
Installed in the Saint-Etienne district in Toulouse, “Les Rousquilles du Palais” performed to conquer the taste buds of Toulouse last March. Rousquille has been a Catalan specialty for more than 200 years, particularly from the Vallespir valley in the Pyrénées-Orientales. This ring-shaped shortbread biscuit is traditionally flavored with anise and covered with a thin layer of meringue which allows it to keep all its softness for 2 months. Pure butter, without dyes and without preservatives, it is handcrafted on site by Raphaëlle Gros and her collaborator Laura. A production that requires patience since it takes about 24 hours of preparation before you can taste it. With a cup of coffee or tea, for dessert, for a snack, and why not in the style of the Catalans, as an aperitif with a local wine sold at the shop. In addition to anise, Rousquille comes in different flavors from orange blossom to candied orange and lemon. “I like tradition but also originality and I’m always looking for new recipes,” says Raphaëlle. After having been in the markets of Cerdagne for a long time, she opened 3 years ago, a first shop of the same brand in Bourg-Madame in the Pyrénées-Orientales. In Toulouse, his Rousquilles are already the delight of local customers, but you can also find them in delicatessens such as the Entracte des Gourmands in Saint-Cyprien or at Bacquié. Raphaëlle intends to make them known even more widely by working not only with distributors but also with professionals, companies or communities, as she is already doing in Perpignan.
