The Maybourne Riviera, a hotel on the side of a cliff with a view of Monaco
Since the start of the Vista Palace transformation project seven years ago, the address has been on everyone’s lips. Now called Maybourne Riviera, from the same seraglio as the Maybourne Beverly Hills in Los Angeles, the establishment combines extreme architecture, Mediterranean art of living and gastronomy. Designed by Jean-Michel Wilmotte and punctuated with references to Eileen Gray and Le Corbusier, the hotel seems suspended above the water, sometimes even dug into the rock – this will be the case for a handful of troglodyte rooms soon to be unveiled. Playing with the laws of weightlessness, the balconies embrace both the Mediterranean and the Principality of Monaco right up to the edge of the infinity pool, in an intense concentrate of Riviera notes. In terms of gastronomy, the Ceto table by three-star chef Mauro Colagreco wins all the votes while waiting for the opening of Jean-Georges Vongerichten’s restaurant. At Ceto, which won a Michelin star this year, executive chef Andrea Moscardino works with local treasures from the Côte d’Azur, favoring responsible fishing through the recipes of Mauro Colagreco, conductor of a table turned towards sea gold. Sent from the open kitchen, the oscillating plates between a langoustine tartare and its Osciètre caviar, a matured red tuna belly (the restaurant has its own fish maturation room, the only one in France), a blue lobster with black cabbage or a seafood millefeuille flavored with Nori seaweed and drizzled with caramel sauce. A fair and gourmet interpretation of the rhythm of the sea over the seasons.
