Toulouse: Guillaume Sanchez, starred chef, takes the keys to Dumbo at Espace Cobalt

On March 19, Christophe Baron, restaurateur, gives the keys to his restaurant Dumbo at Espace Cobalt to the starred Guillaume Sanchez for an improvised menu. An initiative included in the Dumbo TakeOver that he hopes to renew with other chefs.
The industrial wasteland of the start is far away. Espace Cobalt, created in 2015 by Christophe Baron and his associates, Alexis Dupuis and Romain Pecqueret, continues its ascent and its development always focused on creativity. Thus on March 19, for one evening, the starred chef Guillaume Sanchez (Neso restaurant in Paris) took the keys to the kitchens of Le Dumbo restaurant, located in the third place of Espace Cobalt. The Parisian chef has carte blanche to imagine, with the brigade, a menu reflecting his personality. A unique experience for Dumbo, from the La Food Connection group created in 2021.
An experience that the head of Food and the Canaille Club hopes to repeat
“We named this establishment Dumbo in reference to the New York district which saw the birth of graffiti, recalls Christophe Baron. It is also a way of saying that Dumbo, with this new experience of Dumbo Take Over, wants to free itself from the classic codes of catering and offer a cosmopolitan cuisine full of freedom. A way also to breathe new life and avoid weariness”. An initiative that the head of the Canaille Club and Food hopes to renew to explore other culinary avenues with names in gastronomy.
“The Cobalt area lends itself to this type of initiative, considers the chef from Toulouse. A place of experimentation and creation with the Studio 55 stage (240-seat theater) and the Halle (event space), Cobalt is a wasteland of ideas that must live all year round in various situations”. So last year, the place forged a partnership with the MAP photographic festival.
Guillaume Sanchez, an atypical chef, with an original cuisine, was discovered during the 8th season of Top Chef before winning his first Michelin star in 2019 with Neso.
