3 years ago, Marie-Charlotte Antonini turned the page and traded her life as a television journalist for that of a wine merchant; she left Paris for Villeneuve-les-Avignon and opened a natural wine cellar whose success has not been denied over the years. Installed in an old cardinal’s livery, enjoying a courtyard dotted with olive trees and chestnut trees with centuries-old memories, La Divigne has also become a gourmet counter, “it was the ideal address to taste natural wines but also to eat”justifies the young woman.
Inspired by a decidedly nomadic spirit of the times, Marie-Charlotte has decided to welcome, for the coming seasonitinerant leaders. A frantic zapping
“Residences for chefs are becoming more and more common and La Divigne has decided to move in this direction. Working with different cooks is a new way of working” believes Marie-Charlotte. Over periods ranging from 2 weeks to a month and a half, they will take turns in the kitchen. For customers, the advantages are multiple: the restaurant is constantly renewing itself, it allows you to discover talents, to travel without leaving your city and to taste different dishes and flavors.
“We have a difficult and very demanding profession, assures the founder of La Divigne. Nomadism is good because I sincerely think that it breaks the routine, the hours to be extended, that it gives pleasure to working hard for this job, this passion that is gastronomy”. Ensuring that she is looking for new answers to the joint expectations of chefs and customers, Marie-Charlotte Antonini sees in her guest craftsmen “less and less cooks and more and more artists. The addict bosses have the power and we, the establishment owners, are running after them. Moreover, they have agents who negotiate their fees… We are no longer talking about salary but about fees! I am witnessing all these changes with great pleasure”.
