Toulouse. New: a street-food incubator opens in the Jean-Jaurès metro station

Since Tuesday, February 8, 2022, the restaurant Brootchi even inside the Jean Jaures metro stationa Toulouse, offers a unique concept: 3 “restaurants” in the same place. Indeed, three menus with very different influences are now present within the establishment. We present to you this new street-food nursery.
Original Street Food for all tastes
Originally, Brookhy and his manager Ghali Jawahrispecializes in smash the burgera burger with a steak crushed during cooking and caramelized.
Then it is grafted butawith its cuisine in a Japanese spirit (sando, katsu…), and transmitted by Gabriel Montazeau who was pacing the Place de la trinité with his scooter.
The two partners accompanied by their chief laurent have also decided to found together Reuben, of the same name as the sandwich it offers. A sandwich with pastrami and sauerkraut in particular.
Quality products sourced and homemade
This team of three focus on quality more than quantity. Indeed, all the products are traceable and the least we can say is that the managers have struggled to get them.
Ghali gives us the perfect example: “One day we left by car in Italy and we traveled all over the country looking for small producers for our products. Thus, the brand can boast of having hazelnuts from Piedmont, or oranges from Sicily.
But you don’t have to go that far to find quality products. Indeed, Ghali is also the manager of the company Race, specialist and supplier of local products from artisans and producers. This allows Brookhy to be able to work with poultry from Tarn for example. They also work with a bakery in Saint Cyprianand with the famous restaurant Will’s Deli a Paris and pastrami specialist. And even the cabbage for sauerkraut and the pickles that garnish the Reuben comes from an Alsatian producer.
An original concept in an unusual place
And it is underground that the associates use their “Metro Street Food Club”. In the metro station most mentioned by Toulouse residents, Jean Jaurès, the place blends well with the spirit of the place.
To do this, in addition to the latest decorations which will soon be installed, the establishment intends to change its menu regularly. Ghali explains to us: “With this establishment, we allows you to touch everything and create something new. Adding or removing street food is a lot of fashion and like with Gabi (Gabriel) we have always hungry for new things and originality, it is the perfect model. »
Already good feedback and projects in mind
And customer feedback is already good. The objective now is to give visibility to their establishment, in a place, the Jean Jaurès metro, in which the people of Toulouse pass without stopping.
Open from 7 a.m. to 3 p.m., it’s an opportunity to come and enjoy a homemade nutella toast for breakfast accompanied by a Sicilian orange juice or a Reuben, a smash burger or a sando when leaving or before entering. in a subway train!
