These two ephemeral restaurants are designed by the students of the Bachelor Ferrandi Paris
The New Year promises to be delicious at the Bordeaux Lac Campus with the opening in January of two pop-up restaurants! From January 11 to 14, Cedrat will offer a tangy culinary journey. From January 25 to 28, Sabores will allow you to discover Latin ethnic cuisine. These two restaurants are the realization of the end-of-study projects of the Ferrandi Paris Bachelor students who continue their studies on the Bordeaux-Lac Campus. The number of covers being limited to 40 per service, reserving a table is compulsory.
The “Cedrat” graduation project is led by four students from the Campus du Lac, Jérémy Cordier, Charline Delcombel, Julie Lenoir and Alexandre Mayet. With the help of their classmates, they will discover to the guests the richness of citrus fruits by mixing bitterness, liveliness, acidity and sweetness. Among the à la carte dishes, a veal tartare with sudachi and oysters, or a subtle dessert around kumquat, feta and hazelnut. Three formulas available for lunch (starter / main course or main course / dessert at 16.20 euros and starter / main course / dessert at 24 euros). “5-part” tasting menu in the evening at 35 euros. Ceviches and tacos
The Sabores project was created by Zineb Bennani, Jules Fricker, Éloïse Ley and Marion Paoli. On the plates, an ethnic cuisine from South America. To finance their end-of-study projects, students had a maximum budget of 500 euros. If the management of the restaurants is carried out by the creators, the classmates arrive in the general operation of the restaurants. This sixth Bordeaux graduating of the Ferrandi Paris Bachelor is made up of 41 students in progress until the end of January. They will then leave for a five-month end-of-study internship which will conclude their course.
