Toulouse: Matabiau district
The name Matabiau corresponds to the French pronunciation of the Occitan word Matarbuau. Alavetz, cal estar prudent / so, we must remain cautious but it is said that there used to be a slaughterhouse in this Toulouse district. The slaughterhouse says lo masel. In Occitan, matar means to kill. Matar Buau, kill the beef. If in Toulouse, the beef is pronounced in Occitan the buau, it is not the same in Toulouse Gascony, in the Gers or in Comminges. Indeed, in these 3 Gascon regions, the beef is said le bueu o eth bueu. Everywhere else you hear people say lo buòu.
