Et voila! Vincent Farges arrived at Time Out Market Lisbon
No more waiting: the right corner of the chefs wing has a new owner. Vincent Farges, of French nationality, but with half his heart already Portuguese – he has lived in our country for 20 years – is the new tenant.
For more than 10 years, Vincent led the kitchen of Fortaleza do Guincho, where he maintained the Michelin star that the restaurant earned in 2001. In 2018 he opened Epur in Chiado, which earned a Michelin star in just one year.
To the space he now takes over at Time Out Market, the chef brings French cuisine, which reflects, above all, his roots. Some of the dishes you will bring are classics of French cuisine, but especially dishes that will bring back fond memories such as a salad of bird livers, a snapper with smoked aubergines, a black pork tusk with red wine or Baba au Rhum dessert.
For Vincent Farges, this opening represents a “great challenge”. “In the market, my goal is to have a space where I can express simpler cuisine, at a more affordable price, with 100% flavor and a French stamp.”
