Noon in front of chalet 21 in Taulièr d’Occitanie and already a waiting file has been formed. It must be said that its specialty, the hamburger, has been a finalist in the Coupe de France for the best burger twice, in 2020 and 2021. Installed on the Bayonne road in Toulouse, this food-truck that gives fast food its letters of nobility, has been returning to the Christmas Market every year since 2019. Benoît Yori the boss, started in 2017 with the Benaset (Benoît in Occitan) a steak of 130 g in an artisanal bread, with Cantal, onion jam, salad, and Jeannette sauce (tribute to his grandmother). Since then, the menu has grown, notably with a vegetarian burger and a burger of the day, a recipe that varies according to supplies and inspiration. Only fresh products prepared on site in front of the customer. But what makes the burgers of the Taulièr d’Occitanie so tasty is “the smash”, a cooking technique that consists of crushing the finely chopped meat dough on a hot plate. “The steak caramelized on the outside but remains soft on the inside. For this we like to work with juicy and finely marbled meat of the Gascon breed” specifies Benoît Yori. With his small team, he is already preparing a specific recipe for the 2022 Coupe de France on the theme of the globetrotter burger. “And this time we’re going to win,” he says confidently.
