A winning formula
At the Katsu Club, the dishes come in two forms: burger or bowl. “The one who is the most sold is the Sando cheese, a burger with chicken and cheddar cheese, and then the burger with Kimchi, a Korean specialty made from cabbage marinated with chili, ”explains David Bras, the head of the establishment.
On the side of the bowls, it is the Katsu Don who won the day, “a bowl with vinegar rice, chicken and a little kimchi”. Recipes, sauces, “the idea was to do everything from A to Z David Bras continues. The formula market, since a second restaurant will be born.
The next restaurant will be a little different: we want to focus more on “take out” than on delivery. The room will be 104m², so much bigger. All the top, that is to say 60m², it will be for the kitchen and the reception of the customers. The idea is to digitize this space. There will be control terminals.
Customers can eat in this Katsu Club version 2, installed on the Place des Tiercerettes, replacing Mugen Café. 15 places outside, and 6 inside.
“We did most of the work, appreciates the manager. We should open by the end of January. »Initially, the restaurant will be open in the evening, from Tuesday to Sunday.
Taking off in 2020

Five people will be recruited
In the first restaurant located on avenue de Lespinet, five people work there. David Bras is looking for so many for the second establishment.

There is a real difficulty in recruiting. A lot of people tell themselves that they don’t know what they want to do with their life and go into the restaurant business. Except that it is a real profession of service, not easy. We are up for 8 hours, there is the heat of the stoves … I have a lot of difficulty finding people who want and who are competent.
If David Bras carries out his recruiting mission, then he will be able to envisage “probably an opening for lunch and dinner. It is the objective !”
