A key player in the restaurant and nightlife industry for thirty years in Bordeaux, Arnaud Delage has just opened his 28e sign, Bistro Bon, rue des Faussets. A real homecoming for this Bordeaux resident, who ran the Herald’s and the cozy Café in the Saint-Pierre district. The fifty-year-old is also a guitarist in his spare time. (He is a member of PVC-Que du tube, a fusion of musicians with Les Hurlements d’Léo / Smokey Joe & the Kid / les Touffes Khrétiennes / Shaoli).
In a trendy room decorated with a fireplace, where the boss plans to cook soon, we found on the plates the talent of Paul Dagain, 30 years old all round, who has worked with starred chefs like ‘Alain Ducasse and Gordon Ramsay. “We offer a lunch menu at 19 euros (Starter / main course or Main course / Dessert) or 24 euros (Starter / Main course / dessert), and also dishes that can be shared, from 6 euros”, explains he does. A short menu, the owner’s desire to work only with fresh and local ingredients, even if the recipes sometimes shift to make the taste buds travel, like the appetizing Thai tum yum soup.
500 French wine references
Arnaud Delage, who has also been negotiated in wines, suggests food / wine pairings with “the perfect match of the day” on a daily basis (500 references including 60% Bordeaux). The semi-wild duck box from the South-West, roasted in Montmorency sauce, goes for example with an AOC Sancerre, a Pinot de Loire with aromas of crunchy red fruits. In the kitchen (open to the dining room), the chef works with seasonal products, at the moment, roasted scallops in white butter flavored with lemon and raspberry, which the store manager suggests pairing with a sauvignon blanc, known for its aromas of citrus and white fruit. Ambassador of Bordeaux Grands Crus through the Fédération des Grands Vins de Bordeaux ”(FGVB), the boss of Bistro Bon has installed a second cellar at the entrance to his restaurant with an oenomatic system where his customers can taste wines by the glass .
