Egg mayo is a classic of Bistro cuisine, which has all the finery of a simple dish but which still requires a certain mastery. This Monday, November 22, 2021, YAnne Ghazal will have to show all his talent to realize his version of this recipe: the chef of Biben, mythical establishment of the Place du Capitole, a Toulouse, in fact contributes to egg mayo world championship.
Thirteen chefs in competition
This competition is organized by the very serious Association for the safeguard of the egg mayo (Asom).
For this 2021 championship, thirteen chefs will compete and will be decided by a jury of twelve professionals. The competition takes place at Paris.

To put the odds on his side, Yann Ghazal is betting on originality and will offer a goose egg!
“We opted for a goose egg, served with bread toasted with cereals and soaked in goose fat. The mayonnaise, on the other hand, was made with a touch of vinegar aged in oak barrels. All accompanied by ‘a rustic watercress salad. “
Challenge Selected during the Take away
Yann Ghazal was selected by Asom during the Take away challenge, a culinary challenge organized at Toulouse by the influencer Rodolphe Lafarge who, during the confinements had launched challenges to the heads of the Pink City. The mayo egg had been one of the themes proposed by the blogger and Asom had joined the challenge. And had thus discovered with delight the creation of Yann Ghazal.
Will the chef of Bibent offer Toulouse a new international trophy, thus making the Pink City the capital of rugby AND the egg mayo? The results will be proclaimed Monday evening November 22.
