Céline arrived in 2013 when the tram was disembarking at avenue de Muret. The artery has seen its physiognomy change, of course, but has also contributed to the real launch of the vegan trend in Toulouse. “We had become like sectarians at the time,” remembers the manager of the 100% vegan grocery store. The cry of the carrot, which claims to be the only one in the South West.
“People of all ages come here”
Eight years later, the niche sector has turned into a home. The movement has increased and the offer has grown. Especially in the Pink City. “Veganism is more accepted. I see a lot of young and new students, although people of all ages come here. The other day I even spoke to a man fromAlbi (Tarn) and who went vegan at 85! People come from Toulouse and the whole region, ‘says the one who has not eaten meat since the age of 12.
Waffles, cheeses, honey without bees …
Its clientele is “quite young and rather feminine”. At Céline, you can find any product that does not come from animals, without milk or eggs or anything related to animal exploitation or suffering. Biscuits (some gluten-free even if this criterion is not part of veganism), waffles, spreads, cheeses – “a lot of vegans love to eat cheese, I sell whole carts! – and alternative meat.
And with different ingredients to achieve the result. The whipped cream? Fat, sugar and starch. Honey… without bees? Made from liquid sugar and flower extracts. Fish sticks? Made with water, breadcrumbs, soy protein, wheat, starch and flax seeds. The candies ? No animal gelatins but fruit pectin or seaweed like carrageenan.
Foie gras, too!
But Céline’s clients also come, especially for the holidays, for a very specific product: foie gras!
“There are several recipes for making vegan foie gras. First with cashew nuts, white wine, cognac and spices. Then with yeast, coconut oil, coriander and champagne. . I sell it all year round “.
New: Kinder Bueno and M & Ms
The latest find from the Toulouse manager, since the start of the school year, it’s a vegan Kinder Bueno, dark chocolate as well as white, as well as M & Ms. At Le Cri de la carrotte, there are also cookbooks with 100% vegan recipes, cosmetics (shampoo, toothpaste, soaps and zero waste solid cosmetics) and documentation on associations campaigning for veganism.
Former Airbusians have set up a project in Brittany
The vegan trade, for regulars and curious visitors alike, is booming. What to give ideas for expansion? “I don’t want to open several grocery stores, I do things on my own scale. But I know that many would like to get started, ”explains the shopkeeper from Avenue de Muret.
Her eyes shine when she talks about this couple of former Airbus employees who left for Saint-Brieuc (Côtes-d’Armor), in Brittany, open a 100% vegan grocery store at the end of September 2021. An adventure born from the advice given by one of the pioneers of veganism in the Pink City.
