Foodies will rush there! Friday, October 15, 2021, a 100% donut shop has open doors on rue Boulbonne, near place Saint-Georges. American pastry, popularized in the 1950s but also by the “Simpsons” series, is fashionable “and the people of Toulouse were waiting for a shop like this to open,” said Colin, the boss of CocoRosa. “Coco for my nickname and Rosa for the Pink City,” he explains.
A three-year-old project
Because Colin, originally from Normandy, fell in love with Toulouse with his partner.
“We arrived three years ago. I already ran a food truck in the Rouen region. I love sweet things, I have a BTS in hotel management and when I started the project and found a local, there was the Covid. Everything fell apart but that did not discourage me “.
“The donut braids more and more”
After three years of work on the dough and its recipes, and of research, Colin, fan of Anglo-Saxon culture, opened CocoRosa in a district, Saint-Georges, which fills him with joy. And the first days are very promising since it is regularly “sold out”, as it displays on its window, at the end of the day! “The donut is a product that is becoming more and more popular. It is a little pleasure that may be hidden: in any case, people love it! He smiles.
With French recipes
In its manufacturing laboratory, based in Plaisance-du-Touch (Haute-Garonne), west of Toulouse, he revisits the donut “with French recipes, and a dough that takes 10 hours to ferment”. He does not chain the pastries out. “The donut has a very short shelf life. Everything is fresh daily. And you can’t keep the products at the end of the day. It is a very fragile product to manufacture, to cook and to sell, ”continues Colin.
Rose, Doudou… and Viking!
A la carte, find everything. Pretty classic donuts, chocolate, sugar-cinnamon as well as the pink, “The famous Simpsons donut!” », Specifies Colin. But also the Be-Nuts, with peanut butter, the Doudou with homemade chocolate and marshmallow icing, Amalfi with a creamy lemon or even the viking. “This one is my signature donut!” There are applesauce from Normandy and salted butter caramel, ”explains the manager.
A special donut for Halloween
And for Halloween, the Norman entrepreneur plans to put in his storefront, for two weeks, a donut made from cloves, cinnamon and vanilla. “What I also want is to adapt to the seasons. I will not put strawberries in the middle of winter! “.
As for drinks, these are 100% Occitanie juices, with roasted coffee in Labège. A manager in love with dynamic Toulouse, a trendy delicacy: CocoRosa ticks all the boxes to succeed.
