The Auteuil apprentice foundation has opened its third restaurant-school in Lyon. A real restaurant, real customers, a professional team and apprentices.
La Salle à manger de Fourvière is one of two Lyonnais restaurant-schools (a third exists in Grenoble) managed by the Apprentis d’Auteuil foundation. It opened in August 2021 in the house of the chaplains. Whether cooking or serving, the training offered is aimed at young people aged 16 to 30 who are unemployed.
“The idea is to start from scratch. We forget the bad things and we go for the positive” explains Maude Joubert, head of the Dining Room in Lyon. The support is personalized so that each trainee evolves and considers his professional future.
The restaurant operates like a business with economic constraints. It welcomes real customers and has to be commendable.
“A team is present to run the restaurant. The young people are to put themselves in a real situation there but without having the pressure to get there. As the training progresses, the team withdraws so that students can be independent “ she specifies.
Transmission and control
Vincent Sableaux has been a chef since the first school year in August. He has serious ambitions for these students. “I don’t want to make them just good little soldiers but cooks passionate about their profession, who understand it and who are capable of becoming good quality employees”.
Coralie Cypria, apprentice “Kitchen”, works in a restaurant in Villefranche-sur-Saône. In addition, it comes once a week to acquire knowledge and professional know-how.
Joan is a former student of the Confluence restaurant-school. Today, after a few years in various restaurants, he joined the team as a second and therefore became a trainer. “He has this double gaze. He was in their place. He knows how to position himself, what to tell them, how to reassure them and it is a very good example for our young people” increases Maude Joubert.
The theoretical part is taught in a training center in Villeurbanne (metropolis of Lyon). The objective is to obtain a professional qualification in restoration.
Each year, 70 young people are trained in catering by the Pôle Avenir Emploi Auvergne-Rhône-Alpes of the Fondation des apprentis d’Auteuil. Over the past three years 90% have graduated and 80% are employed.
