Here is an address whose reputation is well established. Since the end of 2019, The Boui Boui to propose gourmet kebabs and homemade in the Carmes district, in Toulouse.
Inspired by the best kebab in Europe
“I lived in Berlin for two years and I lived on the street parallel to the best kebab in Europe, Mustafa’s Gemüse Kebap. It gave me ideas ”, explained Julien miquel at the time of opening.
His skewers “Made with love” and composed of pita bread, 100% French meat, roasted vegetables, feta cheese, salad, tomatoes, onions and a house sauce quickly became all the rage so that Le Boui Boui is now too much to the point of. narrow in its small room of 20 m2 located at 24, rue des Paradoux.
To pay dimension changer, Julian Miquel moves his kebab a few meters further, at 41, rue des Paradoux, in a room where it will now be possible to consume on site, since the establishment hasaround twenty seats. The official opening is scheduled for Monday, October 11, 2021. Take-out (and delivery via Uber Eats) remains of course possible.
New recipes, German beers and natural wine
If the place changes, the main principles remain the same: “We do street food but we really make a point of honor to this. that everything is homemade. There is nothing frozen about me! Everything is cut by hand. Pendant The meat is French and marinated for 24 to 48 hours with a mixture of spices and olive oil. The bread is made by an artisan baker. It is important to us! », Emphasizes Julian Miquel. Who pursues:
“In the first room, we were limited to the level of the spindle and we were often“ sold out ”. It was a little frustrating not being able to satisfy all of our customers. There, we will be able to produce two to three times more meat ”, rejoices the thirty-something.
“We’re going to come up with new recipes. We keep of course our homemade meat (made up of turkey and veal) and the vegetarian version and we will also offer a halloumi kebab but also keftas. And on a five new sauces made. In the very, very near future, we will be making homemade desserts and offering German beers and natural wine“, Emphasizes Julian Miquel who also intends to make his new Boui Boui an exhibition space focused on street art.
Quality at a price: count 12.50 euros for a kebab accompanied by fries (house) and a drink.
The origins of kebab
It was in the 19th century, in the Ottoman Empire, that the famous vertical spit for cooking meat appeared. Besides, kebab means in Turkish “grill” and döner means “turning”. But the sandwich as we know it today would have seen the light of day in the 1970s, in Berlin, where a young Turkish migrant had the idea of putting meat in pain.
A new concept of street food in preparation
And that’s not all ! In the old premises, Julian Miquel is preparing a new concept of street food. And to do this, customers had their say!
“We consider that it is thanks to our customers that we were able to buy a larger premises. As we can keep the small room, we left them the choice of what it would become. They were offered four street-food concepts: gyoza, from grilled cheese, from cheeseburger and sando. They voted for two months and in the end it’s the sando, a Japanese sandwich, who won. It’s a sandwich with a sandwich bread prepared by our baker from rue des Filatiers. The sandwich bread is aerated with egg white and milk, and accompanied by marinated vegetables, pickles and red onions. We are going to offer it with breaded prawns, in breaded chicken, or even with scrambled eggs ”.
To taste the Boui Boui version of sando, you will have to wait a little longer. “Sur will be ready at the beginning of November! », Assures Julian Miquel.
