“After 39 years of management we have decided to leave”. Claudio and Luana, owners of the historian Luana Dairy Pastry Bar, in Ponte di Mezzo, they wrote it on a sign posted in the shop windows. Generations of Florentines have passed from their pastry shop and these days the couple are inundated with affection: «We lived 39 years of sweetness with them. Now I live in Prato but I won’t give up on the bongo and zuccotto of Bar Luana », writes a customer on Facebook. «Today Claudio and Luana close. I had my last breakfast with them this morning. Luana has always been at the cash desk, while Claudio is a self-taught pastry chef, Giovanni remembers that he knows them well, because one day he was left without a pastry chef. “Before doing this job he didn’t understand that zuccotto was sweet”, he repeated to those who asked him how he started. “After I complimented him, he said to me: ‘I put a lot of good stuff in it, sweets have to come good.’ Wisdom », John still remembers.
