Toulouse. Their butcher’s shop is a hit at Les Minimes, they are opening in the Carmelite district

Its – long – queue, in front of the metro station ” Minimes – Claude Nougaro », Still continues to surprise passers-by. Inside, young butchers (average age does not exceed thirty) welcome you with a knot of wooden butterfly and a smile on his face.
Opening at the Carmelites
There is no denying success for the ” Butcher’s shop », Avenue des Minimes, in Toulouse. Launched in 2019, this new local institution will be established in the district of Carmelites : to the number 10 Pharaoh Street, instead of the Boucherie du Palais.
“The opening of a second Boucherie des copains is scheduled for 12 October 2021 », Announces Paul, one of the managers. “A new team will be on site, with Julien as conductor. It is a former colleague, who became a friend, that I trained to take the reins of the Carmelites. La Boucherie des copains is aptly named! “
A model to duplicate
This new butcher’s shop at Les Carmes will adopt the same graphic identity as that of Les Minimes. The model will be duplicated. “We offer quality products, selected in the pure butchery tradition,” explains Paul. And to add:
We go to our local breeders to select the animals ourselves. We know each breeder behind each product. This short circuit supply allows us to control the traceability of animals.
Local products
The new team will be able to rely on “this know-how”, assures the Toulousain, originally from Mazamet (Tarn). “Julien will be helped for the launch. We will work with the same products ”. La Boucherie des copains works “with the slaughterhouse of Saint-Gaudens, but also with that of Saint-Girons for pork ”. Its main supplier is Jucla House, in the Comminges.
At Les Minimes, the historic team had taken over a butcher’s shop which was already functioning well. “We have not increased the prices since we arrived,” says Paul. “On the contrary, we tend to want to reduce them”. But the managers say they are bound by a turnover to be financed for the recovery in 2019. “For some products, we have succeeded in reducing the prices by half. For example, for candied thighs, they are sold at 4.80 against 8.80 euros when the owner changes ”.
“We are passionate”
La Boucherie des copains can now rely on a team of seven people at Les Minimes. “The Minimes district is changing, there are many families who want to consume less but better,” Paul emphasizes. Happy with this great dynamic, Paul hopes to experience the same success at the Carmelites. “We are passionate, customers are not mistaken”.
