For this 16e edition of the SIRAH, the Italian colors shone this Saturday, September 25, 2021. The team made up of Massimo Pica, Lorenzo Puca and Andrea Restuccia won the World Pastry Cup in Lyon.
“This final was marked by emotion and creativity, as well as the flavors and colors that emerged from the desserts of the 11 participating teams,” said Pierre Hermé, who succeeded since September 2019 to Gabriel Paillasson presiding over the competition. Thanks to the work of the trio Massimo Pica, Lorenzo Puca and Andrea Restuccia, Italy won its 3e gold medal since the beginning of the competition, and a success to the Malaysian team… winner in 2019.
Desserts cooked around bees and pollination
This competition brought together a dozen countries around the sweet taste. If the desserts must be creative and succulent, the event is committed to responsible values with the single theme ” All art is an imitation of nature ”. Pfor 10 hours, each team cooked 4 desserts to share, 4 frozen desserts and 10 restaurant desserts. Each candidate then had to tell his own story within little-known textures and “shake up his imagination” to win the medal.
Composed of renowned pastry chefs and chefs, the jury was won over by Italian desserts, which linked the bee and nature in an exquisite taste and a daring presentation. The trio thus beat the Japanese team which won the 2e medal and France who finished on the last step of the podium. A victory which brought together participants and a jury within a common passion… to have fun and to please.
